Chocolate Peppermint Cookie Dough Bites

Hello to 2018! Chocolate Peppermint Cookie Dough Bites are the best way to jump start your year!

I’ve got to ask how are all of you? The holidays were pretty awesome right? Well, last time I posted were these: Gingerbread Cookie Dough Squares. I’ve got a little copycat of that recipe with an awesome spin on it.

Chocolate and peppermint make for an irresistible combo. When you combine these flavors with a super satisfying texture, you will find yourself grabbing for more and more! I would say the texture of these most resemble fudge plus a protein bar. It’s slightly chewy but also firm and holds up. I hope that makes sense.

This recipe is very balanced in terms of it’s ingredients. The almond butter is the natural kind that only has almonds as the ingredients. I prefer raw almond butter because it’s flavor isn’t as strong and overpowering compared to roasted. The cocoa powder I used is organic. Dutch processed or normal cocoa work here. Finally the pure maple syrup could also be replaced with agave syrup. I like maple better though.

Important note! The peppermint extract is not to be confused with mint extract. They actually taste quite different. Make sure you get the real stuff too that isn’t imitation crap.

I think that’s pretty much it! Let’s get to the recipe!

  1. Microwave the almond butter and maple syrup until runny (about 30 seconds to 1 minute).
  2. Combine all the ingredients in a large bowl. Add cocoa powder or maple syrup as needed until texture reaches cookie dough-like texture.
  3. Line a pan (whatever size you want) with parchment paper. Press the mixture in tightly and let cool in the fridge for a couple hours. Cut them and enjoy!

Recipe Notes

  1. Almond flour works as well.
  2. Any nut/seed butter works here.
  3. Agave syrup works as well.
