Gingerbread Cookie Dough Squares

Hi guys! It’s the holiday season!! YAY! I thought I would pop on a bit earlier this week to give you guys an awesome holiday gift idea. These Gingerbread Cookie Dough Squares only require 5 ingredients and they are vegan!

The holidays have always struck me as interesting. Now that isn’t something you usually hear. But, here’s what I’m thinking. The year is coming to an end and the holidays seem to make everyone that much more happy and excited for each day. I am curious as to how the thought of the holidays can have such a large impact on our wellness.

Side note: the holidays have become so materialistic that it almost seems like a whole different celebration. I feel as if the holidays are just a way for us to feed our hunger for stuff… for STUFF!

Okay, I’m not saying I don’t like the holidays. I definitely do! But, I don’t love the holidays (Christmas) for the presents, money, vacations, etc. For me, the holidays mean a gathering of family, a feeling of togetherness, and warmth that radiates, things that are easily lost throughout a busy year.

Okay, enough rambling about holidays, let’s get to the food!

These cookie dough squares are amazing because they are full of awesome gingerbread-iness and an awesome texture. If you like the texture of a protein bar or anything slightly chewy and firm (like cookie dough!), you will absolutely LOVE this!

To make this recipe gluten free, I used gingerbread cookies that were, of course, gluten free. If you don’t need to worry about gluten, feel free to use any gingerbread cookies you can find or make. Key thing to keep in mind is that a crispier gingerbread will require more maple syrup and almond butter while a softer cookie will require less. Keep this in mind.

Gingerbread Cookie Dough Bites

These bites are the best treat for a snack or way to start a day. The gingerbread flavors are really amazing too!

Vegan, dairy-free, gluten-free, and oil-free.

  • 1 2/3 cup gingerbread cookies (ground into a crumb)
  • 1/2 cup natural almond butter 1
  • 1/2 cup pure maple syrup 2
  • 1 tsp vanilla extract
  • 1/2 tsp salt


  1. In a food processor or plastic bag, crush the gingerbread cookies in a crumb. A few chunks are okay.
  2. In a bowl, microwave almond butter and maple syrup until easy to stir (about 1 minute).
  3. Combine all the ingredients together and mix. The mixture should resemble cookie dough.
  4. Line a pan (whatever shape you want) with parchment paper and press the mixture tightly in.
  5. Refrigerate for a couple hours or until cool and firm. Enjoy!

Recipe Notes

  1. Any nut/seed butter works here.
  2. Any liquid sweetener will work here.
