HI! Have you guys tried overnight oats? This is my first time trying them and I have been converted! Japanese Sweet Potato Overnight Oats are super good.
Mornings are busy as heck.
But, breakfast cannot be forgotten! That actually kinda bothers me when someone tells me they are really drowsy in the morning and they tell me that they don’t eat breakfast! It is true that people are different, but I feel like we should all incorporate breakfast into our diets.
Overnight oats are a great, convenient, and super healthy breakfast.
Another problem with breakfast is that it is easy for it to get boring. Sometimes it’s hard to find variations in breakfast foods. Fortunately, these overnight oats can literally become any flavor you want. It could be pumpkin spice, chocolate peanut butter, or even bacon! It really can become a lot of things, you just have to have the craving for it.

Japanese Sweet Potato Overnight Oats
These overnight oats are the perfect way to start your day or fulfill a snack need 🙂
Vegan, dairy-free, gluten-free, sugar-free and oil-free.
- 1/2 cup non dairy milk 1
- 1/2 cup Japanese sweet potato (mashed)
- 1/2 cup rolled oats 2
- 2 tbsp chia seeds
- 1 tbsp pure maple syrup or agave syrup (optional)
Mash the sweet potato.
Add in the milk and combine well.
Then add the rest of the ingredients (oats, chia seeds, and pure maple syrup if you want).
Cover tightly and refrigerate 5 hours to overnight. Enjoy cold!
- I use soy milk. Feel free to use any non dairy milk or just regular milk.
- Make sure these are rolled oats aka old fashioned oats. Do not use instant oats. Steel cut oats will not soften.
